Our favorite simple vegan recipes

I'm going to break these down in more detail later and also make a quick post about some items a transitioning-to-vegan person should have on hand, but for now, I want to share some of most loved recipes in our house!  6 recipes & 3 sauces/dips. Here you go!

An easy & delicious vegan lunch or dinner bowl- http://detoxinista.com/2017/01/make-ahead-roasted-vegetable-quinoa-bowls/ Our family makes some
version of this once a week every week. It always has quinoa, avacado, salsa or tomato, onions & garlic, and then some of my staple roasted veggies (brussels, broccoli, peppers, green beans, asparagus.) Always with cilantro!  Make it pretty and fun, adding in whatever vegan goodies you have or want!  I've used everything in these- from frozen peas/carrots to fresh raw green beans, tortilla chip crumbles, faux meat or leftover tvp.

A kinder, healthier alternative to scrambled eggs... scrambled tofu!  The sauce on this scrambled tofu is what makes it magical.  I haven't fed these to anyone that didn't love them, even people who usually aren't keen on tofu.  It's a lot like real scrambled eggs!  https://greatist.com/eat/recipes/10-minute-scrambled-tofu  We usually have some roasted veggies with them and some roasted redskin potatoes.  (Veggies & cubed potatoes on the same tray if I don't have leftovers of one of them- I'm keen on using as few pots/pans/trays as possible!)  The key with this is to press & drain your tofu, crumble it in with your hands, and pour your seasoning sauce over it while cooking. 

Vegan bbq pulled pork style jackfruit!  I used this recipe to learn how to cook jackfruit but I do it much differently.  Here's the reference- http://www.moreveganblog.com/2014/06/28/bbq-pulled-jackfruit/, but what I do:
Buy a can of jackfruit at Trader Joe's (20 oz. for $2.50.)  Buy a jar of brown sugar bbq sauce there too.  Have a sweet or white or yellow onion & olive oil and a jar of pinto beans.
1. Drain jackfruit & squeeze out some of the brine or water.  Dump in a pot with oil & some chopped or sliced onion.  Sautee for a few minutes to cook in some flavor and brown it a little. 
2. Pour in a little bit of vegetable broth or water, cover and simmer over low - low/medium heat.  Stir occasionally.  The jackfruit witll absorb the liquid.
3. Once liquid absorbed, add in a lot of barbecue sauce.  Stir.  Add in your pinto beans (drain them first.)  Spread the onion/pinto beans/jackfruit mixture on a greased baking tray.  Bake at 350ish for 20ish minutes.  Add more bbq sauce and voila!  Consistency and texture of pulled pork, taste of bbq goodness!  Put it on a vegan hamburger bun, piece of bread, top a buddha bowl (rice bowl, quinoa, potatoes) with it, whatever!

Simplest and most delicious fresh baked vegan bread you can imagine. True story. http://www.thecomfortofcooking.com/2013/04/no-knead-crusty-artisan-bread.html We make 2 loaves at a time because one loaf is always gone that night, and then the 2nd loaf takes a few lovely days to munch on.

We make this in a double batch and have leftovers that we use as a sauce in rice or quinoa bowls, with other goodies on top (broccoli, carrots, cauliflower, roasted potatoes...) I dip random bread or crackers (pepper triscuits!) in it all the time. *If you’re new to lentils, know that different color lentils cook very differently. Green lentils stay chewy for me, red lentils break down and become very very soft and mushy. Depends what you want. The chewyness of the green lentils in this recipe is glorious.

http://ohsheglows.com/2016/11/23/cozy-butternut-sweet-potato-and-red-lentil-stew/ I make this in a double batch. It’s a ginormous amount, but my people eat it wildly & can’t get enough. My whole family loves this cozy delicious sweet potato black bean lentil stew- they eat it hot, they eat it straight out of the fridge cold, they eat it straight, they pour it on bread, they put french friend onions or tortilla chips on top. The leftovers are awesome.

Balsamic Reduction Sauce .... amazing sauce (or glaze, if you're fancy) for almost anything: From Vegan Junk Food.  About 12 oz. balsamic vinegar.  About a quarter cup brown sugar.  Boil the vinegar, stir in the sugar, reduce heat to medium.  Cook 15ish minutes, should be thick, but not too thick to pour easiy. 

Angela Liddon's Oh She Glows Quick & Dirty Cheese Sauce http://ohsheglows.com/2011/08/18/quick-dirty-5-ingredient-vegan-cheeze-sauce-recipe-challenge/ - this is so easy and SUPER DELICIOUS.  Unsweetened almond milk, a tiny bit of flour, some nutritional yeast flakes, a little vegan butter (earth balance is great), and seasonings (salt, garlic powder, onion powder.)  Combine, heat, mix, enjoy!  Read her blog for more detail and more ideas on how to fully utilize & enjoy this... this and balsamic glaze are my two favorite go to's for sauce & dip!

Another cheese-ish vegan sauce- http://detoxinista.com/2017/02/dairy-free-cauliflower-cheese-sauce/ (this does not taste like cheese at all, it’s just a delicious dipping sauce! If I make it thick enough, we put it in sandwiches like “grilled cheese” but different... it’s an awesome sauce.)
